One of my favorite Keto Dinners is Keto Nachos with ground beef, keto tortilla chips, guacamole, and sour cream. Sprinkle mozzarella and red cheddar cheese on top and pop it in the oven. Each portion of Keto Nachos contains on average 14.1 grams of carbs.
This recipe yields 6 portions. Below the Keto Torilla Chips is a layer of ground beef, red bell pepper, mushrooms, onion and garlic.
The ground beef is flavored using salt, black pepper, paprika powder, cayenne pepper powder, Mexican spices, cinnamon and garlic powder. Of course, you can adjust this to your own preferences.
What's the difference between Nachos and Tacos?
Nachos are corn tortilla chips with taco meat (sometimes), cheese, tomatoes and whatever distributed on the top. It is then baked and served with salsa, guacamole and sour cream.
A taco is a corn tortilla with the meat, cheese, lettuce, and tomatoes folded into the shell/tortilla. This allows the person to hold and eat the food.

Ingredients Keto Nachos
These are the ingredients for the Keto Tortilla Chips, home-made Guacamole and cream:
Keto Tortilla Chips
- 100 grams / 1 cup of almond flour (blanched)
- 150 grams / 1 ½ cup of shredded mozzarella cheese
- 50 grams / ½ cup of shredded red cheddar cheese
- ½ tsp salt - to taste
- 1 tsp paprika powder
- ¼ tsp cayenne pepper - to taste
- ¼ tsp garlic powder
Ground Beef & Vegetables
- 600 grams / 1.32 pounds of ground beef
- 1 medium yellow onion
- 150 grams / 5 oz red bell pepper
- 100 grams / 1 cup mushrooms
- 2 garlic cloves
- 2 tbsp olive oil
- 1 tbsp Mexican spices mix
- 2 tsp paprika powder
- ¼ tsp cinnamon
- ½ tsp cayenne pepper
- Salt - to taste
- Freshly ground fresh pepper - to taste
- 100 grams / 1 cup of mozzarella - shredded
- 100 grams / 1 cup of red cheddar
Guacamole
- 1 avocado
- ½ tbsp olive oil
- 1 garlic clove
- ¼ juice of a small lemon - to taste depending on the size of the avocado
- Salt - to taste
- Freshly ground black pepper - to taste
Cream
- 100 grams / 3.5 oz of cream (crème fraiche)
Equipment
- Kitchen scale
- Saucepan to melt the cheese or a microwave bowl
- Mixing bowl
- Rolling pin
- Parchment paper
- Oven with oven rack
- Sharp knife or pizza cutter

Step by step instructions Keto Nachos
There are 5 simple steps to make your own Keto Nachos. Below are the step by step instructions.
1. Make the Keto Tortilla Chips
First of all, preheat the oven to 180 degrees Celsius or 350 degrees Fahrenheit.
Secondly, weigh the almond flour, mozzarella cheese and red cheddar cheese. Add the salt and spices to the almond flour and give it a good stir.
Melt the cheese in a saucepan, while continuously mixing it with a spoon.
Once completely melted, add the cheese to the almond flour and kneed it with your hands into a dough. Make sure the cheeses and almond flour are well incorporated.
Split the dough into two or three balls. Place one sheet of parchment paper on the kitchen surface and add one dough ball in the middle.
Then place another piece of parchment paper on top and flatten the ball. Then, you can roll out the dough with a rolling pin.
The dough should be as thin as possible, only a few millimeters otherwise the chips won’t be crispy.
2. Bake the Tortilla Chips in the oven
Cut out tortilla chip triangle shapes with a sharp knife or a pizza cutter.
With the smooth side of the knife, you can carefully loosen them from the parchment paper to spread them out a bit.
Place the parchment paper on an oven rack. Then, sprinkle some more salt and paprika spices on the low-carb chips.
Bake the Keto Tortilla Chips in the oven in two or three different batches. The chips will be ready in 12 to 15 minutes. Keep an eye out otherwise, they might burn.
You can already test if the chips are crispy. If they are not and they are not yet burned, then keep them in the oven a bit longer.
Once you remove the tray from the oven, transfer the parchment paper with the chips to a cool surface.
3. Prepare the ground beef & vegetables
Now the Keto Tortilla Chips are ready, we can work on making the taco meat.
In case the oven is cold, then preheat the oven to 180 degrees Celsius / 356 degrees Fahrenheit.
First of all, peel and cut the onion and garlic. Fry it for a few minutes in a frying pan. Add the ground beef. Once the ground beef is a bit browned, you can add all the spices.
In the meantime, cut the bell pepper and the mushrooms and add this to the frying pan.
Scoop the ground beef mixture in an oven bowl. Cover them with low-carb tortilla chips.
Sprinkle shredded mozzarella and red cheddar cheese on top and pop the bowl in the oven.
The nachos are done after 10-15 minutes when the cheese has melted.
You can decorate them with a bit of coriander or parsley.
4. Make the Guacamole
While the nachos are in the oven, we can prepare the guacamole.
Cut a clove of garlic into small pieces or use a garlic press. Fry the garlic for a few minutes in some olive oil in order for the flavors to come out.
Scoop the inside of the avocado (I used 2 small ones) into a deep plate or bowl and mash it with a fork.
Add the fried garlic, some lemon juice to taste, pepper and salt. And mix everything well together.
Also, scoop the cream or creme fraiche into a separate bowl.
5. Serve the Keto Nachos with Guacamole and Cream
It’s now time to serve the Keto Nachos with the home-made guacamole and cream.

- While the nachos are in the oven, we can prepare the guacamole.
- Cut a clove of garlic into small pieces or use a garlic press. Fry the garlic for a few minutes in some olive oil in order for the flavors to come out.
- Scoop the inside of the avocado into a deep plate or bowl and mash it with a fork.
- Add the fried garlic with its olive oil to the avocado.
- Squeeze some lemon juice (to taste) on top as well.
- Finally, add some freshly ground black pepper and salt, and mix everything well together.
- Scoop the cream or creme fraiche into a separate bowl.
