Easy Stuffed Keto Portobello Mushrooms

Today we are making Stuffed Keto Portobello Mushrooms with goat cheese and walnuts. This is one of my favourite Keto lunches. Of course, you can also serve these as vegetables with your Keto dinner or eat them as a snack, since these are very easy to make. The Keto Portobello’s are ready in about 15 minutes. Each Stuffed Keto Portobello Mushroom contains on average 8 grams of carbs. 

Of course ,you can stuff the portobello mushrooms with other keto fillings. What do you think about green pesto, mozzarella cheese and cherry tomatoes?

 

Other options are zucchini, a bit of onion, garlic and tomato. Or just with some garlic & herb cream cheese for a very simple version. 

 

For a non-vegetarian version, you can add bacon on the (goat) cheese.

Below you can find a step-by-step instruction on how to make these delicious Keto Portobello’s.

1. Clean the Portobello Mushrooms

First of all, preheat the oven to 200 degrees Celsius / 400 degrees Fahrenheit.

 

Clean the portobello’s with a brush, because if you clean them with water, they will soak up the water like a sponge. This will make them soggy.

 

Optionally, you can scape out the black gills from the inside of the portobello.

2. Fill the Portobello's with Goat Cheese and Walnuts

Secondly, brush the outside of the mushroom with a little bit of olive oil.

 

Now its time to fill the low-carb Portobello Mushrooms with slices of goat cheese and pieces of walnuts.

 

Add a bit of pepper and salt on top.

3. Bake the Keto Portobello Mushrooms in the oven

Finally, place the Stuffed Portobellos in the pre-heated oven for about 15 minutes. The mushrooms are ready when they are a bit softer and the goat cheese has melted.

 

Serve the Portobello Mushrooms with some salad for a vegetarian keto lunch or dinner.

Ingredients

  • 2 Portobello Mushrooms
  • 100 grams / 3.5 oz of Goat Cheese
  • 10 Walnuts halves
  • ½ tbsp of Olive Oil
  • ¼ ground Black Pepper
  • Pinch of (Himalaya) salt
  • 60 grams / 2 oz of lettuce (optional)
