What is Butter Chicken?

Indian Butter Chicken, also called Murgh Makhani, was invented by Kundan lal Gujral in the 1950s. He was the owner of a popular restaurant named Moti Mahal in Delhi.

Butter Chicken Curry contains pieces of grilled chicken (tandoori chicken) that are cooked in a smooth buttery & creamy tomato-based sauce.

This Indian Butter Chicken Recipe is adjusted to make it lower in calories. The Naan Breads are made from coconut flour, psyllium husk and olive oil. I made both a keto cheese naan and a keto garlic naan.

For the best flavor marinate the chicken overnight.

Step by Step Instructions

Here are the step-by-step instructions to make this Indian Butter Chicken recipe with low-carb naan bread.

1. Marinate the chicken

First of all, cut the chicken breast into smaller bite-size chunks. Grate the garlic and ginger (if you use fresh ginger).

Secondly, add all the herbs and spices to a bowl and give it a good mix. Add the Greek yogurt and stir until well combined. Next, pour in the lemon juice.

Then add the chicken chunks to the marinade. Ensure all the chicken pieces are covered in the marinade. Cover the bowl with cling film and place the chicken in the fridge.

Ideally, you should marinate the chicken overnight or for about 3 hours.

2. Make the Keto Butter Chicken Curry

Once the chicken has been marinated for a while, we can start making the Keto Butter Chicken Curry.

Melt the butter in a large frying pan or wok. Place the marinated chicken chunks in the pan and cook for about 5 minutes. The chicken should be fried (white or orange in this case) on all sides.

Add the tomato puree, heavy cream, erythritol sugar, and salt. Stir well.

Then, turn down the heat to low and simmer the curry for about 20 minutes. Stir regularly.

Once the curry is done, taste it to see if you need more salt, chili, or erythritol sugar.

3. Prepare the Keto Naan Bread

First, we will make the base of the keto naan bread.

Boil the water in a water boiler or pan. Mix all the dry ingredients in a bowl. Then, add the olive or coconut oil. Give it a good stir.

Slowly add some of the boiling water (start with about 237 ml / 1 cup and stir thoroughly.

Let the dough soak up the water and let it rise for about minutes.  The dough will turn firm fairly quickly but will stay flexible.

It should resemble the consistency of clay. If you find it’s too runny, then add more psyllium husk (start with 1/8 tsp) until the dough feels right. If it’s too firm, add a bit more boiling water.

Let the dough rest for 15 minutes.

Make a dough ball

Divide the dough into 6 pieces. Form small balls and press them flat for normal naan bread with your hands on parchment paper.

If you want a bit more excitement in your naan bread, then follow these instructions to make cheese or garlic naan bread.

Keto Cheese Naan

For Keto Cheese Naan, flatten the naan bread with your hands on parchment paper. You can also use a rolling pin, but do not make the dough too thin otherwise, it might break.

Place the shredded cheese on top of the naan and fold the dough from the middle. Press the edges and flatten the naan bread a bit more.

Heat up some butter or olive oil in the frying pan on medium heat. The easiest way is to open the parchment paper and place the naan bread in the pan. Then peel off the parchment paper from the top.

Fry the naan bread on each side at least for 5 to 10 minutes. It took quite a while to ensure the dough was cooked inside.

The naan should be golden brown and will firm up more once outside the pan.

Keto Garlic Naan

To make Keto Garlic Naan Bread we use the Keto Naan base.

Then melt the butter in the microwave or saucepan. Cut the parsley and press or cut the cloves of garlic into little pieces.

Add the garlic, fresh parsley, and salt to the butter and mix well.

Fry the naan bread in the pan until golden brown (for at least 5 to 10 minutes on each side).

Once ready, add a few teaspoons of the garlic parsley butter mixture on top of the naan bread.
