Keto Pizza with Salami and Mushrooms 🍕

I was craving pizza for a few days, so today it’s Keto Pizza with Salami and Mushrooms! The low-carb crust is made from mozzarella cheese, cream cheese, egg and coconut flour. I chose a topping of salami, mushrooms and fresh mozzarella. One pizza contains 24 carbs. Half a keto pizza (one serving) 12.1 grams of carbs and each pizza slice only 3 carbs.

Of course, you can replace the salami with other keto pizza toppings, like tuna, four-cheeses, ham, chicken or minced meat.

A Keto Vegetable Pizza is also a great alternative. Use vegetables such as aubergine, courgette, tomato, mushrooms, asparagus, rocket salad or olives.

Where does Pizza come from?

Well, first in history we see the appearance of flatbreads with toppings, that were consumed by the ancient Egyptians, Romans, and Greeks. However, the modern birthplace of pizza is in southwestern Italy in the city of Naples.

Naples was founded around 600 B.C. as a Greek settlement. In the 1700s and early 1800s, Naples was a thriving waterfront city. The city was more of an independent kingdom, that was notorious for its poor working population, or lazzaroni.

The Neapolitans required inexpensive food that could be consumed quickly. Pizza met this need. These pizzas were flatbreads with various toppings, that were eaten before any meal and sold by street vendors or informal restaurants.

Step by Step Instructions

The four steps to make this cheesy pizza, are listed below.

1. Make the Keto Fathead Pizza Crust

First of all, we will make the keto pizza crust out of fathead pizza dough. Measure all the ingredients. Preheat the oven to 220 degrees Celsius / 425 degrees Fahrenheit.

Secondly, beat the eggs. Then melt the shredded mozzarella with the cream cheese in a pan or in the microwave. Keep stirring, while you heat it up. The cheeses should be completely mixed.

If you use a microwave, heat the cheeses in intervals of 30 seconds while stirring after each round. 

Keto Pizza Crust

Once the cheeses are melted, you can add the coconut flour. Add the beaten egg to the mixture and stir immediately. Afterward, kneed the dough with your hands until it’s fully combined.

Fathead pizza crust

Sprinkle in the Italian seasoning and garlic powder and form a dough ball. Then, roll the fathead dough between two pieces of parchment paper with a rolling pin. Alternatively, you can use your hands or an empty bottle.

Roll out the pizza dough

The keto dough should be a few millimeters thick.

Bake the keto pizza in the oven

Remove the top sheet of parchment paper and poke some holes in the dough with a fork to avoid bubbles in the dough.

 

Place the pizza crust for 6 to 8 minutes in the middle of the oven. The low carb pizza crust is done when golden brown. Have a look regularly. If you see bubbles, break them with a fork.

2. Add the pizza topping

It is time to add the pizza topping. Cut the ball of Mozzarella into pieces. Then, slice the mushrooms and fry them in a pan with some olive oil until done.

Cut the vegetables and cheese

Mix the double concentrated tomato paste with 1 or 2 tbsp of water to make it more fluid.

Add some more Italian seasoning to the tomato sauce, but save a bit to sprinkle on top of the pizza. Spread the tomato sauce over the keto pizza crust.

Then add slices of salami and the fried mushrooms. 

3. Bake the Keto Pizza in the oven

Bake the pizza for another 5 to 10 minutes in the oven until the cheese has melted.

4. Serve your Keto Pizza with Salami & Mushrooms

Your Keto Pizza is ready to serve. Season the top with the leftover Italian seasoning. Cut the pizza into 8 slices. One low-carb pizza contains about 2 portions. So one pizza can serve 2 people.

On average, one Keto Pizza contains 24 grams of carbs, 85.1 grams of protein, and 116.5 grams of fat. 

 

One serving (half a pizza in this recipe) contains on average 12.1 carbs, 42.6 grams of protein, and 58.3 grams of fat. Each slice contains therefore only 3 carbs!

  • 168 grams / 1 ½ cup of shredded mozzarella

  • ½ tsp garlic powder

Keto Pizza Topping

  • 150 grams / ¾ cup fresh mozzarella (ball)
  • 75 grams / 0.6 cup mushrooms
  • 50 grams / 1.78 ounces double concentrated tomato sauce
  • 75 grams / 0.3 cup salami
  • 1 tbsp of water to make the tomato puree thinner
  • 1 tsp Italian seasoning
  • ½ tbsp of olive oil
  • Freshly ground black pepper - to taste
  • (Himalayan) salt - to taste
