Keto Chicken Nuggets are the perfect Keto Snack with a low-carb drink when watching a movie or a soccer game. Of course, you can also eat them for lunch or dinner with some keto-friendly vegetables. In this recipe, we fry the chicken nuggets in the pan. However, you can also bake them in the oven. Preheat the oven to 200 degrees Celsius / 400 degrees Fahrenheit. Slightly brush the keto chicken nuggets with some oil. Bake them for about 10-15 minutes on each side until golden brown.

1. Cut the chicken breast

First of all, cut the chicken breast into chunks (2.5 cm x 5 cm / 1 x 2 inch). The keto chicken nuggets should be small enough to cook well on the inside without burning the coating. 

 

You can also buy pre-cut chicken breast, but you would want the chunks to be quite big. The smaller the chunks, the more coating you will eat and therefore the carbs will increase.

2. Prepare the nugget coating

Secondly, beat the large egg with the heavy cream in a small shallow bowl. Set this aside.

In another bowl whisk the dry ingredients together: the almond flour, grated parmesan, salt, garlic, onion, paprika, dried oregano, and black pepper. For a bit of a kick, you can add some cayenne pepper.

3. Dip the chicken in the egg-wash and coating

Dip the chicken pieces one at a time, into the beaten egg mixture.

Then press down the chicken nuggets on both sides into the almond flour mixture.

Set aside each coated chicken piece on a plate. You can cover the plate with some parchment paper in order for it not to stick to the plate.

Repeat these steps until all the chicken pieces have been fully coated.

4. Fry the Keto Chicken Nuggets

Heat a 1 cm-layer of oil in a frying pan over medium-high heat. The best oils are high-smoke-point oils like avocado oil or coconut oil.

Fry the chicken nuggets for 4-5 minutes on each side or until golden brown and crispy. Use a sharp knife to cut the center of one nugget and check the meat color. If it’s pink, it needs to fry longer. Keep frying until the meat is white and juicy.

Use a slotted spoon to remove the nuggets from the pan and transfer them onto a plate covered with absorbent kitchen paper to soak the extra oil that could make the coating fall off the meat.

The best way to serve these Keto Chicken Nuggets is warm.
