Sometimes you just crave cookies and these Keto Chocolate Chip Cookies will definitely satisfy your sugar cravings! They are very easy to make and you don’t have to feel guilty. Each Keto Chocolate Chip Cookie contains on average 2.2 grams of carbs.

 

These Chocolate Cookies are made from coconut oil, but you can also use butter of half butter half coconut oil. I used both almond and coconut flour, because the coconut flour just gives it a bit of extra flavour. Furthermore,  I used granulated erythritol to sweeten them.

1. Make the Keto Cookie Dough

First of all, preheat the oven to 175 degrees Celsius / 350 degrees Fahrenheit.


Measure all the ingredients.

Mix all the dry ingredients (almond flour, coconut flour, erythritol, salt, and baking powder) in a large bowl.

In a separate bowl, slightly beat the eggs. Add the vanilla extract.

Then pour the wet ingredients into the bowl with dry ingredients.

Mix everything together. Small lums will appear.

Add the softened coconut oil (or butter or a mixture of both). Stir well until all the ingredients are well combined and start to form a ball.

Chop the 85% dark chocolate into small pieces. Then, add them to the keto cookie dough.

Next, form a dough ball.

2. Roll and shape the cookies

Now we can start to make the low-carb chocolate chip cookies. 

First of all, grab a piece of dough and roll a small ball in your hands. The ball should be about 2-3 cm / 0.78 – 1.18 inches. Of course, you can also make smaller or bigger cookies if you prefer.

Secondly, flatten the dough in your hands and place the cookie on an oven rack. You can make about 20-25 cookies from this dough.

Leave some space in between the cookies, because they will grow a little bit.

3. Bake the Keto Chocolate Chip Cookies

Bake the cookies in the oven for about 12 minutes. 

Let the Keto Chocolate Chips Cookies cool on the parchment sheet for about 30 minutes.

These cookies will stay relatively soft and are still amazing if you keep them in an air-tight container for about 4 days.
