Low Carb & Keto Asparagus with ham, cheese, egg & hollandaise sauce

It’s April again, the start of white asparagus season! Therefore, I cooked Keto Asparagus with ham, cheese, a boiled egg and a delicious hollandaise sauce. This keto recipe is ready in 20 minutes. Each Keto Asparagus portion only contains 7.8 carbs.

You can either make the hollandaise sauce from scratch or buy it from the supermarket. Alternative sauces are cheese sauce or special asparagus sauce.

What's the difference between white and green asparagus?

The difference between white and green asparagus is that white asparagus are grown underground. The spears of white asparagus are completely covered with dirt, so they are not exposed to the sunlight. This prevents them from producing chlorophyll, the green-tinted molecule that’s responsible for turning sunlight into energy. Green asparagus, on the other hand, are exposed to sunlight.  producing chlorophyll, and turning green.1


White asparagus spears, also known as the “white gold”, have a more delicate flavor and are a bit sweeter than green ones.  They tend to be thicker and more fibrous, so it’s important to peel the bottom two-thirds. While green asparagus spears are thin enough that they can be enjoyed while still a bit crisp, white asparagus spears are so thick that they need be cooked till tender.2

Step by Step Instructions

Here are the step-by-step instructions to make this Keto Asparagus dish.

1. Cut & boil the Asparagus

First of all, the fresh white asparagus must be peeled, unlike green asparagus, as the outer skin is fibrous and even woody at times. 

 

You can lay each spear flat and run a vegetable peeler blade down the length of the spear starting at about 3,5 cm / 1-1/2 inches from the tip.

 

Cut off the woody ends from each asparagus spear (about 2-3 cm / 0.5-1 inch).

Boil the white asparagus vertically in a special asparagus pan with the tip up. Alternatively, you can boil them horizontally in a big cooking pot. The water should just cover the asparagus since this is better for the taste.

 

Add a good pinch of salt to the water. You can also add some lemon, which will prevent discoloration.

Boil the white asparagus spears

Once the water is boiling, you can cook them for 8 to 10 minutes. Turn off the heat and cover the pan with a lid. Let the asparagus rest for 10 to 15 minutes until they are tender.

To be sure they are cooked, cut off a small piece from the bottom to taste it.

Drain the asparagus on a clean tea towel or some kitchen paper.

2. Boil the eggs

While the asparagus are cooking, we can boil the eggs. Pinch a tiny hole in the egg which will help the egg separate further from its shell. This will ease the peeling later. 

In order to get soft-boiled eggs, you can boil the eggs for 4 minutes. Hard-boiled eggs will take about 7 minutes.

3. Prepare the hollandaise sauce

Once the asparagus are resting in hot water, you can start preparing the hollandaise sauce. If you use a package from the supermarket, just heat the sauce according to the package.

Of course, you can always make your own hollandaise sauce. Start by melting 100 grams of butter in a saucepan or in the microwave for about 1 minute until hot.

Combine 1 big or 2 small egg yolks with some lemon juice, 1 teaspoon of water, salt, a pinch of nutmeg, and pepper into a blender on high speed and blend for 5 seconds. If you do not have a blender you can do this in a small bowl.

Take the pan with hot butter and turn the blender on again. Very very slowly add the hot butter into the mixture as the blender is still running. If you do this too fast, the egg will set.

Pour the sauce into a small bowl.

4. Serve the Keto Asparagus with ham, cheese, egg & sauce

It’s time to serve our “white gold” asparagus. Place 2 pieces of ham on a plate. Add the drained asparagus, and one (or two) boiled eggs.

 

Then, cover the asparagus spears with grated Gouda cheese. Drizzle the hollandaise sauce over the plate.

Finish this lovely keto asparagus dish with some freshly ground pepper and salt.
