Sometimes you just need a keto snack, and what is better than Keto Chocolate Truffles? Most importantly, they are very easy to make! One Keto Chocolate Truffle contains about 2.3 grams of carbs. So, what are you waiting for?
Of course, you can make a lot of different truffles. In this recipe, we have a coating of cacao powder, coconut rasp and shredded almonds.
We are making normal low carb chocolate truffles, and ones with a filling of pecan nuts and (frozen) raspberries or forest fruit.
How to make your own Keto Chocolate Truffle?
Follow these 4 steps to make these lovely keto chocolates at home.
Ingredients Keto Chocolate Truffles
Here are the ingredients to make our delicious chocolate truffles.
Ingredients keto chocolate ganache
- 80 ml / 1/3 cup of heavy cream
- 30 grams / 2 tbsp of butter
- 200 grams of 85% chocolate or sugar free chocolate
- 1 tsp (keto) vanilla extract
Truffle coating
- Coconut rasp
- Cacao powder
- Shredded almonds
Truffle filling
- Pecan nuts, walnuts, almonds
- Raspberries / forest fruit (frozen)
Equipment
- Saucepan
- Several bowls
Macro Overview Low Carb Chocolate Truffles

As you can see, this recipe yields about 19 truffles. Each low-carb chocolate truffle contains about 2.3 grams of carbs, 1.3 grams of protein, and 8.1 grams of fat.
Step by Step Instructions Keto Chocolate Truffles
Below you can find the 3 steps to make these yummy keto chocolate truffles at home.
1. Make the chocolate ganache
First of all, break the 85% dark chocolate into smaller pieces.
Mix the heavy cream with the butter in a saucepan. Heat this up until the butter has melted and the heavy cream starts to boil.
Take the heavy cream off the fire and pour it over the dark chocolate. Then, add the vanilla extract. Stir this mixture, until you have a thicker chocolate ganache.
I chose to pour the mixture into 4 smaller bowls since I wanted to make 4 different keto chocolate truffles. The picture shows only one of the smaller bowls.
Either place the bowls in the freezer, until it’s a bit harder so you can roll balls with it (15 minutes), or refrigerate the ganache for about 2 hours.
Place a plate or oven bowl in the freezer. This is necessary to cool down an area, where you can later place the newly rolled truffles on.
2. Prepare the truffle coating
For these Keto Chocolate Truffles, I chose three different coatings: cacao powder, coconut rasp/flour, and shredded almonds.
Moreover, in some of the chocolate truffles, I put a filling of pecan nuts or (frozen) forest fruit (blueberries, raspberries, strawberries, or blackberries).
Other types of fillings can be almonds, walnuts, or keto caramel fudge.
3. Roll the Keto Chocolate Truffles and dip them in the coating
Once the ganache cooled down and became harder, we can start rolling the truffles. Then, take the plate or oven bowl from the freezer or fridge and line it with parchment paper.
For the next steps, you would need to work quite fast. The idea is to scoop up a table spoon of ganache and roll the ganache in between your hands to form a ball. Since your hands are warm, this will get messy and the longer you keep the truffles in your hands, the more it will melt.
I recommend washing your hands with cold water or cool them down in the freezer for a bit.
Roll the balls and then dip them in the cacao powder, coconut rasp, or shredded almond.
Place them on the plate / or on the parchment paper and continue to the next keto chocolate truffle.
To make them a bit more special, you can add a filling in the middle of the truffle. Here we used one pecan nut or a frozen raspberry or half a strawberry.
Ensure you cover the filling completely with the ganache. Secondly, dip the low-carb chocolate truffle in the coating of your choice. Make sure the coating covers the whole truffle.
4. Serve and eat the Keto Truffles
Place the Keto Chocolate Truffles in the fridge. You can take them out of the fridge 5 to 10 minutes before serving (depending on the weather, you do not want them to melt).
Each Keto Chocolate Truffle contains about 2.3 grams of carbs.
