No time to be in the kitchen for hours to make a dessert? Well, don’t worry because this Quick Keto Blueberry Crumble is finished in only half an hour! Made with a low carb crumble and dusted with powdered Erythritol, it looks like a restaurant dessert.

As you know fruit contains a lot of carbs and is thus restricted on a Keto Diet. Berries, like blueberries, raspberries and strawberries can be eaten, but in small amounts.

1. Place the blueberries into a pie tin

First of all, preheat the oven to 190 degrees Celsius / 375 degrees Fahrenheit.

Then line the pie tin with parchment paper. Wash the blueberries and place them in the cake tins.

Sprinkle the juice of about ¼ of a lemon over the blueberries.

2. Make the low carb crumble

Mix the almond flour, coconut flour, chopped pecan nuts, Erythritol, a pinch of salt, and vanilla extract in a bowl.

Beat the egg in a separate bowl. Melt the unsalted butter and let it cool down a bit.

First, pour the butter over the dry ingredients and briefly stir, so big chunks of crumble appear. Do not overmix it.

Then, add the egg to the bowl and give it another quick stir. You should have a crumble looking dough.

Scoop the crumble dough over the blueberries.

Finally, sprinkle a bit of cinnamon over the Keto Blueberry Crumble.

Place the Keto Crumble in the oven for about 20-25 minutes.

  • 125 grams / 1 ¼ cups blueberries
  • Juice of ¼ lemon
  • 50 grams / ½ cup almond flour
  • 30 grams / ¼ cup coconut flour
  • 40 grams / 1.41 ounce pecan nuts
  • 1.5 tbsp Erythritol
  • Pinch of salt
  • 3 drops stevia vanilla extract
  • 1 egg - beaten
  • 60 grams / 4 tbsp unsalted butter - melted
  • Cinnamon - to sprinkle over the crumble

Equipment

  • Cake or pie tin 15 cm / 6 inch (or 2 small ones)
  • Parchment paper
  • Saucepan or microwave to melt the butter

Instructions
