Today another quiche recipe: a hearty Keto Quiche with Leek, Mushrooms & Gruyère Cheese and Bacon (optional). Made with a low carb crust, fresh vegetables, and a creamy Swiss Gruyère cheese & crème fraîche filling to bind it all together.

What is Gruyère cheese?

Gruyère cheese is a Swiss cheese coming from the region of Gruyère, that has been known for its cheese production since the 12th century. It is a smooth-melting type of Swiss cheese that’s made from whole cow’s milk and generally cured for six months or longer. The cheese is often used in the famous Cheese Fondues but is also delicious in quiche dishes.

Psyllium Husk

Psyllium is a form of fiber and it is made from the husks of the “Plantago ovata” plant’s seeds.

For centuries, it has been used in the traditional medicine of Ayurveda to promote the body’s overall health & well-being.

Psyllium husk is therefore often used for the regulation of bowel movements and to help relieve constipation. 

Other benefits are that it can help lowering cholesterol and can balance blood sugar.

Step by Step Instructions

Here are the step by step instructions to make this Keto Quiche with Leek, Mushrooms & Gruyère cheese (and bacon).

1. Prepare the Keto Quiche Crust

First of all, we will prepare the Quiche crust. Preheat the oven to 200 degrees Celsius / 400 degrees Fahrenheit. 

Line the Quiche tin with parchment paper and grease the sides with olive oil or butter.

In a bowl, mix the almond flour, coconut flour, psyllium husk, herbes de provence, and salt together.

Whisk the egg in a smaller bowl and melt the butter in the microwave or in a small pan. Let the butter cool down a bit. Add the whisked egg and melted butter to the dry ingredients. Wash your hands and knead the dough into a ball with a spoon or with your hands.

Keto Quiche Crust

Transfer the dough to the quiche tin. Press the dough to cover the bottom and the sides, so that the dough is evenly distributed.

 

Bake the crust in the preheated oven for about 10 to 15 minutes, until the crust is slightly golden. 

 

Remove the crust from the oven and lower the temperature to 180 degrees Celsius / 360 degrees Fahrenheit.

2. Make the Quiche filling

Then, wash and cut the leek, mushroom, and onion.

Heat the olive oil in the pan on medium heat. Fry the vegetables and bacon (optional) for about 10 minutes. You can add pepper and salt to taste.

3. Mix the eggs, crème fraîche and spices

Place the eggs into a mixing bowl. Add the crème fraîche, nutmeg, salt, and pepper. Now whisk everything together.

Once the vegetables are ready you can place half of it on the Keto crust. Spread it out evenly.

 

Cover the vegetables (and bacon) with 100 grams of Gruyère cheese. Pour half of the egg & crème fraîche mixture on top. 


Then you add the other half of the vegetables on top, followed by the other half of the Gruyère cheese. Finally, pour the last half of the egg & crème fraîche mixture over the quiche filling.

4. Bake the Keto Quiche with Leek, Mushrooms & Gruyère cheese in the oven

Bake the Keto Quiche with Leek, Mushrooms & Gruyère cheese in the oven for 35 minutes or until the cheese is turning slightly golden.

  • 1½ tbsp olive oil
  • 150 grams / 1 3/4 cups of leek
  • 100 grams / 1 cup mushrooms
  • 1 onion
  • 100 grams / ½ cup bacon - optional
  • 4 eggs
  • 190 grams /  4/5 cup crème fraiche
  • 200 grams / 1 3/4 cup Gruyère cheese
  • ¼ tsp nutmeg
  • ¼ tsp freshly ground black pepper
  • (Himalayan) salt - to taste
