It is almost Sinterklaas again, and that includes Keto Gingernut Biscuits (or Dutch “Keto Pepernoten”)! Because Sinterklaas also has to watch his diet from time to time.
These low-carb ginger nuts are made from almond flour and are therefore suitable for a ketogenic diet.
Because the Pieten wanted chocolate ginger nuts, we will aso mention below how you can make Keto Chocolate Gingernuts!

It is very easy to bake these low carb gingernut biscuits. Follow these 4 steps:
Ingredients Keto Gingernut Biscuits
Below are the ingredients for the Keto Gingernuts.
Ingredients
- 125 grams / 1 1/3 cup almond flour
- 50 grams / 3 1/2 tablespoons of butter
- 40 grams / 2 1/2 tablespoons Erythritol
- 2 tablespoons pumpkin pie
- Small pinch of salt
- 1 egg white
- Dash of almond milk
- 85% dark chocolate (for Keto Chocolate Gingernuts)
Pumpkin spices or gingerbread spices can be used to make these Gingernut Biscuits instead of “Speculaas” spices that are used in the Netherlands. Check out this website if you want to use the real Dutch Speculaas spices.

Macro Overview Keto Gingernut Biscuits
Below are the average number of carbohydrates, proteins, and fat per ingredient to make the Keto Gingernut Biscuits or Chocolate Gingernuts.
As you can see, 1 gingernut contains 0.2 grams of carbohydrates and a dark chocolate gingernut contains 0.4 grams of carbs.
Step by Step instructions
Below are the detailed instructions for baking these low-carb ginger nuts.
1. Make the gingernut dough
First of all, preheat the oven to 170 degrees Celsius / 338 degrees Fahrenheit.
Secondly, weigh all ingredients. Then put the almond flour, erythritol, pumpkin/gingerbread spices, and a pinch of salt in a bowl. Mix everything together with a fork or spoon.
Melt the butter in a saucepan and let it cool for a while. When the butter has cooled slightly, pour in a dash of almond milk. Give it a good stir.
Add the butter with almond milk to the dry ingredients. Now stir everything until a dough forms.
Then pour the egg white into the dough and mix it with a fork. Optionally, you can knead the dough with your hands.
2. Shape the gingernut biscuits
Line an oven rack with parchment paper. Preferably, do not use a baking tray, since the gingernut biscuits can easily burn.
Take a small piece of dough and roll it into a small ball between your hands. The ball should be about 1 cm / 0.39 inch big.
Flatten the gingernuts a little bit and place it on the baking paper. Make all gingernuts like this. We had about 55 pieces.
3. Bake the Keto gingernuts in the oven
Bake the gingerbread cookies in the oven for 12-15 minutes. But keep an eye out, especially after 10 minutes, as they can burn very quickly at the bottom. So check regularly whether it is going well.
The Keto Pepernoten are soft at first and slowly become crispy. Therefore, let them cool down for at least an hour.
4. Dip the Keto Gingernut Biscuits in dark chocolate
To make your own Keto Chocolate Gingernuts, melt a few cubes of 85% dark chocolate in a saucepan or in the microwave.
Be careful, the chocolate is hot! Then dip the top of the gingernut biscuits in the chocolate.
Place them in the fridge to harden. Your low-carb chocolate gingernuts are now ready!
Each gingernut contains an average of 0.2 grams of carbohydrates. One Keto Chocolate Gingernut has an average of 0.4 grams of carbs.

Instructions
Normal Keto Gingernuts (Pepernoten)
- First of all, preheat the oven to 170 degrees Celsius / 338 degrees Fahrenheit.
- Then weigh all ingredients.
- Place the almond flour, erythritol, gingerbread spices, and a pinch of salt in a bowl and mix everything together with a fork or spoon.

- Add the butter with almond milk to the dry ingredients. Now stir everything together well, until a dough forms.
- Then pour the egg WHITE into the dough and mix it through with a fork. Optionally, you can knead the dough with your hands.
- Line an oven rack with parchment paper. Do not use a baking tray, because then the gingerbread cookies will burn earlier.
- Now form small balls of about 1 cm / 0.39 inch between your hands to form the gingerbread cookies.
- Press the gingernuts a little flat on the bottom and place it on the baking paper. Make all gingernut biscuits like this. We had about 55 of them.
- Bake the gingernuts in the oven for 12-15 minutes. But keep an eye out, especially after 10 minutes, as they can burn very quickly at the bottom. So check regularly whether it is going well.
- The Gingernuts are soft at first when they just come out of the oven and slowly become crispy. Therefore, let them cool for at least an hour.
- The regular Keto gingernut cookies are ready.
- Each gingernut contains an average of 0.2 grams of carbohydrates, 0.6 grams of protein, and 2.1 grams of fat.
Keto Chocolate Gingernuts (Chocolade Pepernoten)
- Follow the previous steps to bake regular Keto Gingernuts and let them cool down.
- To make your own Keto Chocolate Pepper Nuts, melt a few cubes of 85% dark chocolate in a pan or in the microwave.
- Be careful, the chocolate is hot. Dip the top of a Keto Gingernut in the dark chocolate. Do this with all gingernut biscuits.
- Then put them in the fridge to harden. Your low-carb chocolate gingernuts are ready!
- Each Keto Chocolate Gingernut contains approximately 0.4 grams of carbohydrates, 0.7 grams of protein, and 2.3 grams of fat.
