Firstly, lets list the ingredients necessary to make this Keto Bread:
- 3 tbsp extra-virgin olive oil + additional olive oil for greasing the loaf pan
- 2 cloves of garlic
- 120 grams / 1¼ cups of almond flour
- 1 tbsp of coconut flour
- 2 tsp of baking powder
- 2 tsp of lemon zest
- 1 tbsp of Herbs de Province
- Big pinch of salt
- ½ tbsp of rosemary
- 1 tbsp vinegar
- 3 large egg whites
- 113 grams / ½ cup shredded mozzarella cheese
- 45 grams / ¼ cup chopped olives without pit (green or black – whichever is your favorite!)
- 23 grams / ½ cup Parmesan cheese - grated
- Sliced almonds - decoration

Step by step baking instructions
To create your own delicious bread, follow these instructions:
1. Preheat the oven and prepare the loaf pan
First if all, preheat oven to 200 degrees Celsius /400 degrees Fahrenheit.
Secondly, grease the inside of a 23 cm / 9 inch loaf pan with some olive oil.
Thirdly, peel the garlic cloves and smash them or cut them in small pieces. Add some olive oil in a small skillet and cook the garlic for about 5 minutes on a low heat.
2. Mix the dry ingredients together
Start with washing the lemon and dry it. Then scrape of the skin of the lemon to get your lemon zest.
In a large bowl, combine the almond flour, coconut flour, baking powder, lemon zest, herbs de province and salt. Mix these dry ingredients well.
3. Focus on the wet ingredients
Now we will focus on the wet ingredients of this Keto Bread recipe.
Mix 3 tablespoons of warm water and the vinegar in a large bowl or a mug.
Then, in a separate bowl, whip the egg whites until stiff peaks are forming. Set this aside for now.
4. Combine the dry and wet ingredients
Remove the pit from the olives (if present) and cut the olives into slices.
Whenever the garlic has cooled down, stir the vinegar mixture and the garlic with the oil into the dry ingredients.
Then, fold in the egg whites until they are almost completely incorporated in the mixture.
Lastly, fold in the shredded mozzarella and the sliced olives.
5. Add the mozzarella, olives, parmesan cheese and rosemary
Combine the grated parmesan cheese and rosemary herbs in a medium size bowl. Then, very carefully, add the dough mixture with the parmesan mixture with a spoon.
Place the dough in the loaf pan. Don’t worry if pan isn’t filled, the bread will still be great.
