Steps by step instructions to make the curry
1. Cut and cook the chicken breast
We start by washing the chicken breasts, because you never know where it has been. Secondly, cut the chicken breasts in smaller pieces of about 1.5 cm.
Add 1 tablespoon of olive oil to a skillet and cook the chicken breast for about 5 minutes, until they are all white all around and start to brown. Add salt and freshly grounded black pepper to the chicken.
Then put the (not fully cooked) chicken breast on a plate and set aside for later.
2. Cook the onion
Peel and chop an onion into small pieces. Add 1 tablespoon of olive oil to the skillet, that you just used to cook the chicken.
Add the onion and let it cook until the edges are starting to brown a bit.
3. Stir in the spices
Once the onion is starting to brown, you can add the coriander powder, cumin, paprika, cardamom, cayenne pepper, and nutmeg.
If you do not like spicy food or cannot handle spicy, reduce the amount of cayenne pepper. In this recipe there is half a teaspoon, you will taste a bit of a kick and your nose might start to run a bit. If you really love spicy food then add some more cayenne.
Cook the spices for about 2 to 3 minutes, while stirring them regularly, because this will bring out the flavour.
4. Combine it with the coconut milk, tomato paste and ginger
Add the finely chopped fresh ginger, can of coconut milk and concentrated tomato paste and still it well.
5. Simmer the chicken in the curry for 15 minutes
Now its time to add the chicken breast to the Tikka Masala curry and let it simmer for about 15 to 20 minutes on a medium heat, until the chicken is completely cooked.
