Ingredients of this Lovely Meatloaf
- 500 grams / 1lb lean minced meat
- 1 medium sized onion
- 2 cloves of garlic
- 1.5 tablespoons of almond flour
- 1 medium sized egg
- 2 tablespoons sour cream
- 1 tablespoon chipotle hot sauce
- Leaves of 4 fresh thyme sprigs
- 1 teaspoon smoked paprika powder
- 5 tablespoons grated parmesan cheese
- 1 tablespoon herbes de province
- Pepper - to taste (1 tsp)
- Salt - to taste (1 tsp)
- 1 tablespoon fresh rosemary leaves

One meatloaf will render about 8 slices, however I fully recommend to bake the double amount of the recipe when you want to feed more than 2, because the leftovers can be stored up to 4 days.
Step by step instructions for easy keto meatloaf
So, we are ready to start! Here are the step by step instructions that will easily guide you towards a mouthwatering easy keto meatloaf:
1. Prepare the ingredients
For baking, the most important part is the preparation of the dish. Same goes for this meatloaf, but if you prep the ingredients well, the meatloaf will come together easy as pie! or….. loaf!
First of all, put together your dry ingredients. In a large bowl, measure and mix the almond flour with the thyme leaves, rosemary and the grated parmesan.
Then finely cut the onion and the garlic. The rule is, the thinner and finer you slice your onion and garlic, the better the taste of the meatloaf. Because then the meat has a real chance to soak up all those lovely flavors!
Add the onion and garlic to the almond flour mixture.
Then, move on to prepare the wet ingredients. Mix together the egg, the sour cream and the chipotle sauce. Be sure to mix well into a smooth blend.
2. Mix the ingredients with the minced meat
In the meantime, preheat the oven at 180 C / 350 F.
Now prepare the minced meat. Generously cover the minced meat with salt, pepper, herbes de province and smoked paprika powder. The recipe calls for 1 teaspoon of salt, in case you like the meatloaf a bit on the salty side, you can double the amount of salt.
Now mix all the ingredients into the meat, including the wet ingredients. Knead with your hands into a soft sticky boll of meat.
3. Put mixture in baking loaf and bake
Finally, almost ready to bake! Grease the inside of a loaf tin and put the mixture into the loaf. Depending on the size of your loaf pan, you can fill it entirely or just half.
In any case, the loaf should be filling the tin only halfway in height. If you double the amounts in the recipe to serve 6 or more, you can fill up the entire tin.
Put the loaf in the preheated oven and bake for about 30 – 35 minutes if you are making half a loaf and 50 minutes if you are making a double serving.
