This Crustless Keto Asparagus Quiche with Mushrooms is a low carb version of a normal quiche and still very tasty! The Quiche is made from eggs, heavy cream, mozzarella and parmesan cheese. Only 9.8 grams of carbs per portion.
The top of the quiche is decorated with the pretty ends of the asparagus.

- 250 grams / 2 cups of mushrooms
- ½ small red onion
- 3 garlic cloves
- 250 grams / 2 cups of green asparagus
- 6 eggs
- 100 ml / ½ cup of heavy cream or crème fraîche
- 75 grams / 3/4 cup of parmesan cheese - shredded
- 100 grams / 1 cup of mozzarella - shredded
- 2 tsp Provencal herbs (Herbes de Provence)
- Salt - to taste
- Freshly ground black pepper - to taste
- 2 tsp curry powder

1. Cut & fry the vegetables
First of all, cut or press the garlic cloves into small pieces. Then, chop the red onion and slice the mushrooms.
Clean the asparagus spears and chop about 2 cm / 0.8 inch off the bottom.
Pour the olive oil into a frying pan over medium heat. Fry the garlic and onion for a minute, before adding the mushrooms.
The mushrooms are done after 5 to 10 minutes when they are darker in color and smaller in size.
Divide the asparagus spears into 3 parts. The top part of the asparagus spears can be a bit longer than the other 2 parts. These tops are used for decorating the top of the quiche later.
Fry the asparagus for about 10 minutes with 1 tsp of provencal herbs, salt and pepper. The asparagus will become softer.
Remove the pretty tops of the asparagus and set aside.
2. Add the egg-cheese mixture to the pan
Place the eggs into a mixing bowl or pan and add the heavy cream / crème fraiche. Give it a stir and add the provincial herbs, curry powder, pepper and salt.
Next, add the shredded mozzarella and parmesan cheese. Mix everything together.
First of all, add a little bit of olive oil to the pan and scoop the mushrooms, red onion and garlic back into the frying pan with the bottom parts of the asparagus.
Keep 4 mushroom slices aside for decoration.
Then, pour the egg-mozzarella-parmesan mix in the frying pan with the vegetables.
Cover the frying pan with a lit and let the crustless quiche cook for about 10 to 15 minutes.
The egg mixture should become harder, but the top of the quiche should not be completely cooked yet.
3. Decorate the Crustless Keto Asparagus Quiche
Once the egg-cheese filling has become a bit harder, you can decorate the top of the quiche with the pretty tops of the asparagus. If you do this earlier, they will sink to the bottom.
Create a nice pattern with the asparagus. For example, you can place them in a circle.
Cook the quiche for another 5 minutes or until the egg filling has hardened.
As a final touch, place a few mushrooms in the center.
