Mexican Keto Chicken Fajitas in Keto Wraps

I just love Mexican or Tex-Mex food and these Keto Chicken Fajitas in Keto Wraps are one of my favorites. The wraps (or tortillas) are keto-friendly and easy to make as well. Eat this dish with home-made guacamole and sour cream.
What are Fajitas
Traditionally fajitas were made with skirt steak, which was tenderized with a zingy marinade, grilled, sliced against the grain, and placed into tortillas.
However, in this recipe, the fajitas are made by combining chicken, onion, bell peppers, and mushrooms. The chicken has a seasoning of paprika, cumin, cayenne pepper and garlic powder.
Keto Wraps
The Keto Wraps or keto tortillas are made from Fathead dough. Just combine mozzarella cheese, almond flour, and Xanthan Gum.
I also add a little bit of psyllium husk to help your stomach.
What is psyllium husk?
Psyllium is a form of fiber and it is made from the husks of the “Plantago ovata” plant’s seeds.
For centuries, it has been used in the traditional medicine of Ayurveda to promote the body’s overall health & well-being.
Psyllium husk is therefore often used for the regulation of bowel movements and to help relieve constipation.
Other benefits are that it can help lowering cholesterol and can balance blood sugar.

Ingredients Keto Chicken Fajitas in Wraps
Below you can find the ingredients to make the wraps, chicken fajitas and guacamole.
Ingredients Keto Wraps
- 100 grams / 1 cup of almond flour
- 200 grams / 2 cups of shredded mozzarella cheese
- 1 tsp of Xantan Gum
- 0.5 tbsp of Psyllium husk - optional
- Pinch of salt
- Little drizzle of olive oil - to fry the wraps in
Ingredients Chicken Fajitas
- 500 grams of chicken breast
- 1 tbsp of olive oil
- 2 bell peppers: one red and one yellow
- 1 onion
- 100 grams of mushrooms
- Parsley (optional for decoration)
Fajitas Seasoning
- 2 tsp paprika powder
- 1 tsp of cumin
- 1/4 to 1/2 tsp of cayenne pepper
- 0.5 tsp cacao (optional)
- 1 tsp of garlic powder
- Freshly grounded black pepper - to taste
- Salt (Himalayan) - to taste
Ingredients home-made guacamole
- 1 avocado
- Olive oil - to fry the garlic (1 tsp)
- 1.5 cloves of garlic
- Freshly grounded black pepper
- Salt - to taste
- 1 lime: 1/2 a lime for lime juice, 1/2 to sprinkle over the food
Equipment
- Big frying pan - for the chicken
- Smaller frying pan - for the keto wraps
- Mixing bowls
- Small saucepan
- Blender to mix the guacamole - optional

Home-made Guacamole
Below are the ingredients and macros for the home-made guacamole.
Ketoer’s be careful: Adding Guacamole when you are on a Keto diet will increase the carbs from 14 grams to 18 grams per serving. Subsequently, this could be too much depending on what you eat for the rest of the day.
For this reason, you might have to omit for example the mushrooms or some of the spices.
As shown above, one serving of 2 Keto wraps with Chicken Fajitas and Guacamole contains on average 18.3 grams of carbs, 48.7 grams of protein, and 43.7 grams of fat.
Step by Step instructions
Here are the step by step instructions to make the Keto Wraps, Keto Chicken Fajitas and the delicious home-made Guacamole.
1. Start by making the Keto Wraps
To make the Keto Wraps you start by combining the almond flour, Xanthan gum, salt, and (optional) psyllium husk in a bowl. Stir well.
Put the shredded mozzarella cheese in a saucepan and heat it up over medium heat. Once you see it starts to melt a bit, add the dry ingredients.
Now keep on stirring with a fork or spoon, because the ingredients need to be mixed well to form a good dough.
Then, roll the dough out on a silicon mat. You can do this with your hands, but to get them as thin as possible it’s better to use a rolling pin.
Flatten the dough between parchment paper. Afterward, cut out round wraps with the help of a tortilla sized plate.
Fry the Keto Wraps on each side in olive oil at medium heat. The wraps should be slightly brown.
You can get between 6 to 8 wraps from this recipe, depending on how thin you can roll the tortillas. Each wrap only contains 2 grams of carbs.
2. Cut and fry the chicken & vegetables
First of all, wash and cut the vegetables. Then, slice the chicken breast into small strips.
Heat up some olive oil in a large frying pan and fry the onion for a few minutes. Then add the chicken strips and veggies.
Add the seasoning and let it cook until the chicken is ready for about 15 minutes.
3. Prepare the guacamole
If you decide to make the home-made Guacamole – good choice!
Start by peeling the garlic cloves and cut or press them into small pieces. Then, fry the garlic in a small frying pan with a bit of olive oil on medium heat. Fry them until golden brown.
In the meantime, place the inside of the avocado either in a blender or in a bowl. Add salt, pepper, and lime juice.
Finish by blending or mixing the garlic (with the oil) with a fork through the avocado.
Add some black pepper and salt on top and decorate with a slice of lime.
4. Assemble the Keto Chicken Fajitas in wraps
It is finally time to assemble the Keto Chicken Fajitas Wraps! First of all, place some of the chicken and vegetable mix in the middle of the wrap.
Secondly, close the wrap. You can make the wrap stick by putting a little bit of sour cream of guacamole in between the 2 sides of the wrap when you close it.
Decorate the wraps with some parsley. Serve the Low Carb & Keto Chicken Fajitas with sour cream, guacamole and lime.
