Keto Chicken Parmesan is made by breading chicken breast in a mixture of parmesan cheese, almond flour, and herbs. After frying it in a pan, we place it into the oven with a tomato-basil sauce, mozzarella cheese, and more parmesan cheese. This dish is served with a spinach and bacon salad.

Below you can find the step by step instructions to make this lovely Keto Parmesan Chicken recipe and the Spinach Salad.

1. Bread the chicken breasts

Firstly, beat the egg in a medium but wide bowl. 

In a large bowl or deep plate, combine the parmesan cheese, almond flour with all the Italian herbs, dried oregano, dried basil, garlic powder, onion powder, salt and pepper. Mix this with a fork.

Dip each piece of chicken completely in the egg and then in the Parmesan-almond flour mixture. This should create a coating on both sides.

2. Fry the Keto Parmesan Chicken in the pan

Heat up the butter in the big frying pan at medium-high heat.

Place the chicken breasts in the pan and fry them for 4 minutes. Turn the chicken and fry for another 4 minutes. Now the crust should be brown on both sides.


Then, lower the heat. Turn the chicken and cook until ready. Keep on turning the chicken once in a while. The total cooking time depends on the size of the chicken breasts but should be around 20 minutes.


Preheat the oven to 200 degrees Celsius / 400 degrees Fahrenheit.

3. Make the tomato-basil sauce

In the meantime, add the tomato puree, water, fresh basil, Italian herbs, salt, and pepper to a small saucepan.

Warm up the tomato sauce and make sure to stir once in a while.

4. Bake the chicken in the oven

First of all, scoop a little bit of tomato sauce into the oven bowl.

Secondly, transfer the chicken breasts to the oven bowl. Top each piece with the rest of the tomato-basil sauce.
 

Then, top the chicken breasts with the shredded mozzarella and more parmesan cheese. Bake the Keto Parmesan Chicken for about 10-15 min.

The Keto Parmesan Chicken is ready when the cheese turned golden in color.

5. Prepare the Spinach Salad

While the chicken is baking in the oven, you can make a simple spinach salad.

Fry the bacon strips in a small frying pan till crispy. Wash the spinach and place it in a salad bowl.

In a small bowl, add the olive oil, lime juice, mustard, powdered erythritol or liquid sweetener (to taste), salt, and pepper. Mix the dressing and taste it to see if it needs more mustard or sweetener.

When the bacon is ready you simply combine the spinach with the bacon and dressing.

If you would like to prepare a more filling salad, you can always add pecan nuts or feta cheese to it.

  • 4 small or 3 large chicken breasts (500 grams / 1.64 ounces)
  • 40 grams / 1/3 cup almond flour
  • 100 grams / 1 cup parmesan cheese
  • 1 large egg
  • 2 tsp Italian herbs
  • 1.5 tsp dried oregano
  • 1 tsp dried basil
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • (Himalayan) salt - to taste (1/4 tsp)
  • 1/4 tsp freshly ground black pepper
  • 1 tbsp butter
  • 100 grams / 1 cup mozzarella cheese
  • 25 grams / 1/4 cup parmesan cheese

Tomato-basil sauce

  • 100 grams / 3.5 ounces double concentrated tomato puree
  • 100 ml / 3.4 ounces water
  • 2 tsp Italian herbs
  • Fresh basil

Spinach Salad with Bacon

  • 120 grams / 4 cups fresh spinach
  • 125 grams / 1/2 cup bacon
  • 1 tbsp olive oil
  • Juice of 1/2 lime
  • 2 tsp mustard
  • Few drops liquid keto sweetener (stevia) - to taste
  • Pinch of salt
  • Bit of freshly ground black pepper
